If your duck is warm I would say none of the above - can't you make a nice marmalade sauce?

If it's the duck it does matter, but jams and chutneys last for decades!

Not unanimous, but a strong majority for the date and orange chutney.

We actually had a gooseberry cheese sauce, but why the jar is labelled "gooseberry cheese" when the ingredients are gooseberries and sugar water is a marketing mystery. It was very nice and I'd have it again.

A misunderstanding of what fruit curd means? Although it also doesn't include any of the ingredients for a proper curd either.

Oh, I get it. Since the gooseberries are high pectin, the mixture is supposed to become fairly solid, like quince paste, so it can be sliced like cheese (and frequently served with cheese as well). But if they only made it thick enough for a sauce rather than a sliceable cheese, then they have merely made gooseberry jam. Gooseberry cheese sauce, hah!

All of that sounds very plausible. Brian thinned it for the duck sauce.
